How to Heat Your Biryani
The sealed vessel method for perfect dum biryani at home
Our party orders (Half Kg and 1 Kg packs) arrive in sealed aluminium vessels with traditional dough packing around the rim. This is the same dum method used in the kitchen — the dough seal traps steam inside, allowing the rice and meat to cook in their own aromatic juices. To serve, you simply need to heat the sealed vessel on a flame. Here is exactly how to do it.
Step 1
Place on a low flame
Set the sealed vessel directly on your gas stove on the lowest possible flame. Low heat is critical — a high flame will scorch the bottom layer of rice and burn the masala before the steam can circulate through the vessel. The dum method relies on gentle, even heat. Think of it as the final stage of cooking, not reheating.
Step 2
Wait for strong steam
As the vessel heats, steam will begin to escape through the dough seal. At first it will be gentle wisps. Wait until you see forceful, continuous steam pushing through the dough — this means the biryani inside is fully heated through and the flavours have reactivated. The aroma at this stage is unmistakable.
Step 3
Timing guide
As a general reference: a Half Kg vessel takes about 10 minutes and a 1 Kg vessel takes about 15 minutes on low flame. But always go by the steam, not the clock. Every stove is different. When the steam is strong and steady, your biryani is ready. Turn off the flame, break the dough seal, and serve immediately.
Tips for the best result
Do not open the seal early
Breaking the seal releases the trapped steam, which is what heats the biryani evenly. Opening early means uneven heating and lost aroma.
Never use high flame
High heat burns the bottom and dries out the rice. The whole point of dum is slow, gentle heat. Trust the process.
Serve immediately after opening
Once the seal is broken, the biryani is at its peak — fragrant, moist, and perfectly layered. Serve within minutes for the best experience.
Use a diffuser if available
A heat diffuser or tawa placed between the flame and vessel distributes heat even more evenly, reducing any risk of scorching.

Can I microwave the biryani?
We recommend the flame method for the most authentic taste and texture. However, you can transfer the biryani to a microwave-safe container and heat it — it will still taste excellent, just without the fresh-off-the-dum aroma.
How long does the biryani stay fresh?
For the best experience, consume within 2 hours of delivery. If you need to store it, refrigerate within 4 hours. The sealed vessel keeps it warm and fresh for longer than standard packaging.
Can I reheat it the next day?
Yes. Transfer the biryani to a microwave-safe container and heat thoroughly until steaming. Sprinkle a few drops of water before reheating to restore moisture. It reheats well thanks to the quality of the rice and the dum cooking method.
